The Perfect Avocado Toast

I’m a sucker for an Avocado. And Avocado Toast !

Loaded with heart healthy monounsaturated fats,  this fruit, (Yep, they are fruit! )  are great for your skin and have high levels of Vitamins K, C, E  along with Potassium and fiber!

Besides adding this delicious fruit into your guacamole,  these little buggers are a great substitute for mayo and also perfect in a salads, sandwiches or on their own.

Since heart disease runs rampant in our family, (especially on my mom’s side) I’ll usually have an avocado a few times a week.

Helpful Tip:  If you are only using half of a avocado, keep the pit in the half that you’re not using, put a sprinkle of lemon or lime juice over the sliced non half to prevent it from oxidizing, and put the unused half in a small tupperware bowl or wrap in plastic wrap in the fridge.   It’ll keep for a day or two!

One of my all time favorite ways to eat avocados is Avocado Toast. It’s so easy to make and can be used for breakfast, lunch, dinner or a snack.

Your main ingredients are:

A ripe avocado

A slice or two of  really good hearty bread ( like, wheat, rye, protein bread.. doesn’t really matter. It can even be a bagel. Just make sure that it’s sturdy)

A sprinkle of lemon juice

Salt and pepper

2 Tomato Slices

Feta Cheese (or whatever cheese you have)

A half of a boiled egg.

Directions.

Toast your bread,  then while it’s toasting, cut your avocado down the middle and open it, scoop out one half and place it in a bowl.  Mash it up, add salt, pepper,  and a few drops to taste of lemon juice.   Mix everything together until it has a chunky, yet smooth texture

Take your toast out and spread the mashed up avocado  onto to the toast.  And you can then add tomato, egg, and feta cheese.

*Note you can top your avocado toast with just about anything. Chicken, turkey,  a fried egg,  cheddar cheese.  It all works.
